Biscotti Gelato is an improved version of a genetic line that was originally released in limited quantities in early 2025.
The first edition showed great promise, but for 2026, the goal was to further develop and strengthen stability through extensive selection and the breeding of large populations.
The Biscotti (Cookies) side remained unchanged, with the same phenotype selected due to its robust structure, high bud density, and its distinctive aromatic profile reminiscent of freshly baked pastries with subtle spicy notes.
In contrast, on the Gelato (Sherbinski’s) side, a phenotype with a stronger influence from Sunset Sherbet was selected, offering greater depth and complexity to the overall terpene profile.
The result is an exceptionally balanced and expressive wine, with aromas that combine creamy sweetness, gassy notes, berry notes, and subtle tropical undertones.
The flavor is dominated by a more doughy and “baked” character, complemented by a slightly spicy aftertaste that adds an extra layer of complexity.
Particular emphasis was placed on the genetic stability of the line. Parental selections were tested under different growing conditions, with the aim of identifying and eliminating undesirable traits. This process resulted in a population with improved vigor, a stronger plant structure, and more uniform trait expression.
